These pretty pastel-colored cookies are perfect for a spring baby shower.

cups sugar

cup butter or margarine, softened
1/2
cup shortening
1
teaspoon vanilla

eggs
4
cups Gold Medal® all-purpose flour

teaspoons baking soda
1
teaspoon salt
3
cups petite pastel-colored mint chips

  1. Heat oven to 350°F. Beat sugar, butter, shortening, vanilla and eggs in large bowl with electric mixer on medium speed until light and fluffy, or mix with spoon. Stir in flour, baking soda and salt. Stir in mint chips.
  2. Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet.
  3. Bake 11 to 13 minutes or until light golden brown. Cool 30 seconds; remove from cookie sheet to wire rack.
Makes About 8 dozen cookies
